No British Christmas dinner is complete without pigs in blankets: small sausages wrapped in bacon and roasted until golden. In the UK they are made with chipolatas. In Germany, small Nürnberger Rostbratwürstchen from the supermarket are the closest match – and with proper back bacon they taste just like home.
Ingredients for 24 pigs in blankets
- 24 small sausages, e.g. Nürnberger Rostbratwürstchen or chipolatas
- 8 rashers of Geordie's back bacon, smoked or unsmoked
- 1 tbsp honey or maple syrup (optional)
- A few sprigs of thyme (optional)
Method
- Preheat the oven to 200 °C (180 °C fan) and line a baking tray with baking paper.
- Cut each rasher lengthwise into three thin strips. Our back bacon is cut extra thick, so thinner strips wrap more easily and crisp up nicely.
- Wrap one strip around each sausage, slightly overlapping, and place them seam side down on the tray.
- Roast for 20 to 25 minutes, turning once, until the bacon is golden and the sausages are cooked through.
- For a sticky glaze, brush with honey and scatter over the thyme for the last five minutes.
Tips
- Make ahead: wrap the sausages the day before, cover and keep them in the fridge. Roast them just before serving.
- Freeze: uncooked pigs in blankets freeze well. Roast them from frozen, add about ten minutes and check they are cooked through.
- Turkey: lay a few rashers over your turkey crown so the meat stays juicy.
